Milo’s Famous Sweet Tea Brined Oven Fried Chicken

Ingredients

  • 3 c. Milo’s Famous Sweet Tea
  • 1/2 c. soy sauce
  • 1/2 onion, halved
  • 3 garlic cloves, smashed
  • 1 chicken, cut into 8 pieces (bone-in, skin on)
  • 1/4 c. unsalted butter
  • 1 c. all-purpose flour
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tbsp. paprika
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, whisk tea and soy sauce. Add the onion and garlic. Add chicken, cover with plastic wrap and refrigerate at least 4 hours and up to overnight.
  2. Preheat oven to 425° F.
  3. Remove chicken from marinade and use paper towels to dry. Season each side of chicken generously with salt.
  4. In a shallow dish or in a bag, combine flour, seasonings, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  5. Place butter on a rimmed baking sheet or glass baking dish. Put in oven until melted, about 2 minutes.
  6. Thoroughly coat each piece of chicken in the flour mixture. Place skin side down in the melted butter. Bake for 30 minutes. Flip and bake an additional 20-30 minutes, until golden brown and crispy and chicken is 165° F. Serve with lemon, if desired.
